OPOS ghee

lesson learnt - Always go with cracking sound. 


Took 500gms butter (room temp) ,cut into two halves. Both were 250gms approx. Pics in comments.
Fired the first batch in a 2ltr@900w. Timer 6 mins. Noted the lapse time, as it increased, stopped and released pressure slowly. Transferred the ghee carefully.
Added some plain cooked rice in PC and took the ghee off, washed the PC roughly .
Added next 250gms butter, this time went by the crackling sound , switched off. Released pressure and transferred.
Total : 380 GM's of ghee from 500 GM's butter.

Few FAQs:
Why is my ghee dark/light?
As the lapse time increases and you get the whistle, your ghee gets darker (kasandu/black residue increases). To avoid black residue completely, go by crackling sound, the sound comes before the whistle.
As you switch off going by crackling sound and release pressure, you get perfect golden ghee.

Why is ghee lesson 29?
As you see opos ghee video , it seems very easy. You tend to skip lessons and jump making ghee, finally burn it.
As we start and progress with lesson, we slowly get comfortable with the basics, water cooking, flash, waterless cooking.
More importantly, we tend to become more disciplined. We are used to following the recipe properly, we are used to handling hot cooker and releasing pressure without any mishap by the time we reach lesson 28. Finally, we don't have "just cooker cooking" attitude.

Why only 250gms in 2ltr?
As you open cooker, you find only 1/4th cooker filled with ghee.
But remember, as you increase quantity in 2ltr pc, you tend to face spewing and handling hot ghee is dangerous!!
Hence stick to the recipe, scale up in bigger PC or make in 2ltr twice in 10 mins flat !
